Chef Vicio, known for his fresh pasta and love for Sicilian cuisine, has created a special Easter menu. Let’s take a look at the dishes and their inspirations.
1- Appetizer: Breaded and fried burrata, filled with bronte pistachio pesto, served with sautéed friarielli, garlic, aromatic herbs, Parmigiano cream and Cetara anchovies.
To begin, we present an appetizer inspired by Chef Vicio, a 'nest' of flavors perfect for celebrating Easter. At its heart, the novelty you've been waiting for: a delightful fried burrata, crispy on the outside and creamy within, resembling an egg, a symbol of rebirth and festivity. The dish is completed with a bed of fresh friarielli, adding a touch of color and a slightly bitter note. A delicate Parmigiano cream embraces the palate with its richness, while the Bronte DOP pistachio pesto adds a unique and unmistakable Sicilian touch, with its intense and characteristic aroma.
2- Pasta: Pappardelle infused with rosemary, lamb ragĂ¹, wild fennel seeds, sun-dried tomatoes, pecorino and toasted breadcrumbs.
Next, we have a pasta dish, Chef Vicio's specialty. It's a classic Italian recipe with his own twist. Here's a detail that truly sets this dish apart: the pappardelle are infused with rosemary, kneaded right into the dough, releasing its fragrant aroma with every bite. Lamb, a traditional Easter ingredient, is the star, pairing beautifully with the rosemary-infused fresh pasta. Chef Vicio has added his personal touch, blending the earthy lamb ragĂ¹ with wild fennel seeds, sun-dried tomatoes, local pecorino, and toasted breadcrumbs for a symphony of flavors.
3- Main Course: Beef Braised cheek with mashed potatoes, mushrooms and seasonal vegetables.
For the main course, we're serving our exquisite beef braised cheek, slow-cooked to melt-in-your-mouth perfection in rich Nero d'Avola wine. This Sicilian red, with its bold and fruity notes, infuses the meat with a depth of flavor that's simply irresistible. The tender, savory beef is then complemented by creamy mashed potatoes, earthy mushrooms, and a medley of seasonal vegetables, each ingredient carefully chosen to create a harmonious blend of textures and tastes.
