Sardine fillets ”alla beccafico”.
It is a typical Sicilian dish, from the Agrigento area.
Fillets are filled with breadcrumbs, pecorino cheese, orange juice, raisins, pine nuts, parsley and then breaded in egg and fried. They are served with a fresh salad of fennel, oranges, shallots, olive and mint.
Fish tortelli, filled with ricotta, salmon, lime, seasoned with thyme-flavored butter and peppercorns.
Oven-baked prawns, with rosemary potatoes and Sicilian pistachio mayonnaise.
